Green Curry Recipe

(Geng Jitta)

Ingredients:
Green curry paste (Mae Ploy brand)
1 can Coconut milk
1 Eggplant (cut into cubes)
Sliced mushrooms (as many as you like)
Chicken (as much as you like)
Green beans, chopped (as much as you like)
Fish sauce (optional)
Oil (to cook chicken)

Directions:
Heat oil in wok
Fry chicken with curry paste in wok until the chicken is almost (3/4) cooked.
Add green beans, eggplant, and mushrooms.
Fry everything together until the vegetables are soft
Add coconut milk (and water, to desired consistency) and bring mixture to a boil
Add fish sauce if desired, then simmer to taste.

Serve over rice and with fresh cilantro if desired.
