8 oz flour = 2 cups
2tsp baking powder
¼ tsp salt
2 oz butter = ¼ cup
1 oz sugar = 1/8 cup
2 oz saltanas – enough to speckle dough like pancake batter with berries
milk to soften (-3/4 cups)
Mix flour, salt and baking powder in a bowl. Rub in the butter to make small pea-sized grains. Add sugar and saltanas. Mix in milk to make soft but not sticky dough. Turn out onto floured board and kneed very lightly until ½ inch thick. Cut into wedges, squares or two-inch rounds (the less you move the dough the better). Set on a lightly greased baking tray and bake in a preheated oven at 425 degrees Fahrenheit for 12-14 minutes ur until lightly golden.
