Vegetarian Lasagna

oven ready lasagna noodles
cottage cheese
2 eggs
tomato sauce (one that is already seasoned)
mushrooms
spinach
mozerella
parmesan
[Meat option: Add ground beef-directions for including meat are in brackets below]

Preheat oven to 375*F. Saute [ground beef with] onions until cooked. Mix the
cottage cheese with the eggs until fully blended. In the bottom of a 9x13"
pan, spread some sauce. Place a layer of noodles. Then make a layer of cottage
cheese and spinach. Add a thin layer of sauce. Put down another layer of
noodles. Now make a layer of mushrooms [and ground beef mixture]. Cover with
sauce. Put down another layer of noodles. Cover with sauce and sprinkle on
mozerella and parmesan cheese. Cover with aluminum foil, and bake in oven for
1 hour, removing the tinfoil for the last 10 minutes. Let cool for 15 minutes
before serving.
