Talked with Hanna Reeves in the Learning Technology Lab at Media Union Facility U.M. She showed me round the new Chef system and was very open and helpful.
Here's the email she sent me:
Thanks for your interest in CourseTools Next Generation, the University of

have set up a demo site on CourseTools Next Generation for Earlham College.
To log into the site, you can go to http://chefproject.org/chef/portal

I have given you the following login names and access levels:
[ included in the email I was sent]
This should allow you to see what functionality is available from the
perspective of both an instructor and a student.
We are piloting CTNG this term with anticipated roll out scheduled to begin
next fall to approximately 5,000-10,000 users. Development is taking place
on a daily basis. We will be adding several new features and improving upon
existing functionality before the fall roll out.
Try out the site and see what you think. We would be both interested in
getting your feedback and happy to answer any questions you may have.
Regards,
Hannah

Talk with her about how to create a system for evaluating web sites.
Uses an application called Camtasia recorder which records the screen and audio in timed snapshots. Could be good for documenting "how tos?"
